The long wait is over. Indonesia has its very own Ippudo branch. This #ramenreview is brought to you after a loooong queue line due to its hype. This, my friend, is Shiromaru Motoaji ramen, a variant of Hakata style Tonkotsu ramen. Shiromaru has a long standing history in Ippudo as it is their original signature ramen dish. But is it worth the whopping price (to Jakarta's standard at least)? First the soup. The highlight, the soul of this ramen. The soup is very LIGHT, you want to gulp it all down. Although the soup is light, the taste is very RICH. It's very delicious and tasty, as expected from a tonkotsu ramen. But the lightness complement the soup to a higher level. It doesn't leave you with a "magteg" (did I spell it correctly?) aftertaste. The noodle is thin and firm, beautiful pair for the soup. The add ons are fine and well in place. The chasiu and kakuni, well.. These are the second highlight of this ramen. They marinade the meat so well and cook it very beautiful. It's like a dish within a dish without ruining the main dish. Very delicious although the portion might be too big for some people. One drawback of the ramen (although this is optional) is the tamago. It's just a plain boiled egg. No taste at all. It's a bit overcooked as well. Don't get your hope that the tamago is gonna be like Marutama's or Santouka's. Overall, this is a great ramen definitely worth having for (minus the tamago). 75/100
Oh while you're at here, try the pork bun, one of their signature dish as well. It'll make you wanting for more and more.
