A very clean broth that is silky and fatty x despite it being quite thin and clean. The flavours are quite mild and not too obvious, and I wonder if there could be more to it. Same to the noodles: think, silky, with a nice firm texture, but some flavour is missing. The condiments are nice; crunchy, clean spinach. The bamboo with a slight sweetness and good crunch. Chashu thin but with a good fatty taste and texture, and some more flavour. This bowl has a very good foundation and well executed. Very polished, maybe a little too much?
