A local creation. A tonkotsu broth, quite strong taste and saltiness, smooth but relatively thin though. Broth is nicely hot and steaming. Thhe noddles firm and a good bite. The ginger a little too strong, and the chives also bit on the sharper side, but antagonising the smoothness well with their acidity. The beef was soft and fell apart just like that. Good flavour. Overall, well executed and crafted but somehow I can’t really munch in. Maybe it is the beef that lacks the fattiness I would love when going into a tonkotsu broth. Still, worth trying out again and sample others too
