  • Tan tan dan is now regularly having special days (over 3 days now) and offers something more: a classic shoyu bowl. I have been waiting for this.

    It is a very clean broth, light, but with a clear saltiness snd umami. The noodles as good as always, firm, a bit thinner, and a good flavour. The egg as well: nicely soft, and a good saltiness vs sweetness. The bamboo with a slight crunch and a slight saltiness that is then covered by the actual bamboo taste. The chashu is a thin but fatty slice, with little marinating. I assume that the main saltiness should come more from the broth. Spinach with a lovely dark green colour and a little crunch but overall tender.

    They aim to have those ramen specials regularly from now on
