Solid broth, quite the opposite of smooth texture. Good and rich and Smokey flavour, superb noodles with a great texture and chew. The egg was surprisingly solid and firm, with less punch than I was hoping for. The same applies to the broth: some more punch was missing . The chashu was not so super fatty, but with a right level of tenderness and flavour.
