miso tonkotsu

A miso tonkotsu ramen. The broth has a rather nice miso flavour, with some richness and a lil sourness. The miso is home made and only done in this shop, none of the other wafu. But the broth was rather lukewarm. The noodles were rather thin, straight, and short. I think slightly undercooked. The bamboo was rather chewy and streaky, with very lil sweetness in there and any other flavour. The chashu were very thin slices, also rather very little marination or flavour.
All in all, there were some right pointers but still nothing achieved.
The shop allows to make very precise orders, with all modifications like what kind of noodles, or to add garlic or spicyness.
