• miso ramen (2000円)

  • A miso ramen that ticks several boxes I don’t see often in Europe: it had corn, butter, and also some fried minced pork. The noodles are straight and rather on the soft side. The broth isn’t really hot, rather warm, ok thickness but missing some punch. The dhashu isn’t bad , thin slices with a bit of Smokey aroma. The egg is in total a bit on the harder side, one can see the egg yolk is a bit too cooked, with a clear salty punch but little other aromas. The bamboo is almost not noticeable, thin strips with little flavour

    Some good elements that don’t work super convincingly well for some reason.
